Leavening CO2 is released by the reaction of sodium aluminum sulfate and monocalcium phosphate in the presence of moisture, then 30% is released at batter temperature, and the remainder is released when heated. This reaction provides lift, and tenderness to food. Most all recipes can use double acting baking powder.
