Once it reaches the right level of ripeness, it is harvested and selected by hand. The cooking process is carried out at low temperatures to preserve the organoleptic properties of the raw material and the final product. Finally, once the product is bottled, it undergoes pasteurization to ensure long-term preservation without the use of preservatives.
