Corzetti are pasta medals with a pattern carved on both surfaces, to better retain the sauce. The term corzetti indicates both the pasta and the mold (base and upper part) that creates it. They adapt to many condiments, from classic Genoese pesto to white sauces based on walnuts and pine nuts, from white to red ragout sauce.
