It is the thick dark syrup remaining after the sugar is extracted. Regular molasses comes from the first or second boiling, whereas blackstrap molasses comes from the third boiling of syrup. Blackstrap molasses has the highest concentration of vitamins and minerals and is very dark in colour and very viscous.
