Packed in the UK. Strong wholemeal flour is best suited to breadmaking. Its "strong" feature comes from the fact that it's milled from harder varieties of wheat, giving it a higher protein content than other wheat flours such as all-purpose flour and pastry flour.
The high protein content of strong flour (around 12%-14%) corresponds to the amount of gluten formed when water is added to it, and is what creates more rise and structural support in the dough, giving bread made from it plenty of lift and helping it to hold its shape. It also gives bread a texture that's chewier than cakes, for example, which typically use all-purpose flour with a lower protein content of around 10%-12%, and helps to form the crust. Our organic strong wholemeal flour is idea for making all types of breads – from baguettes to bloomers to ciabatta to sourdough loaves – as well as chewier baked goods such as bagels and pretzels.
Thanks to its bran content, which gives this flour more fibre than strong white flour, the effectiveness of its gluten content is reduced, so breads and other goods baked with it will not rise as much as those made with white flour. They're texturally denser, more moist, and and have less spring, so it can be a good idea to use our organic strong white bread flour in the dough to make your bread a little lighter. The bran is also highly absorbent of liquid, so add a little more liquid than you would to a white flour recipe to ensure that the dough is able to be kneaded enough.
