After this, it is then partially dried and seasoned. Typically, with garlic, coriander, black pepper, paprika, cloves, allspice, and mustard seed. After this, it is then smoked and steamed.

Treating the meat in this way turns a cheaper cut into something incredibly tasty. It literally melts in the mouth and has an amazing soft buttery texture. The history of pastrami dates back to ancient times when salt was used as a means of preserving meat.

However, nowadays it is frequently associated with both Romanian and Jewish cuisine. Apparently, pastrami was first served in New York City in the late 1800s by a Lithuanian butcher called Sussman Volk. He was given the recipe by his Romanian friend in repayment of a favour.
