This salt is hand collected from the salt ponds of Ifaty, Madagascar - the white crystals form a crust on the surface of salt ponds, as water evaporates due to the sun. Yuzu is a small Japanese citrus fruit, with floral, lime blossom aromas. With its delicate notes, this salt is best used to finish a dish, whether it’s sprinkled over pan-fried scallops, dipped in the rim of glasses for a twist on margarita cocktails, or add a pinch to scoops of dark chocolate gelato.

The company was founded by Erwann de Kerros, a Breton and seasoned traveller.
